Tteokguk with Ancient Peaks

Celebrate a fresh start and prosperity in 2025 with a traditional Lunar New Year dish – Tteokguk (Korean Rice Cake Soup).

This recipe is easy and delicious, perfect for a cold evening. We recommend pairing this soup with 2023 Sauvignon Blanc or 2023 One Stone Rosé.

Ingredients:

  • 200 grams rice cakes, soak for 30 minutes then drain
  • 100 grams beef, sliced into bite-size pieces
  • 1 stalk scallions, chop the white part into small pieces and cut the green part into 2-inch pieces
  • 1 Tbsp. sesame oil
  • 1/2 Tbsp. garlic
  • 1 1/2 Tbsp. soy sauce
  • Salt, to taste
  • Pepper, to taste
  • 1 egg, beaten
  • 3 cups water
  • 1 pc Dashi soup base, let boil for 10 minutes

Method:

  1. Prepare rice cake, beef, and soup base according to the instructions above.
  2. In a pot, sauté beef in sesame oil and garlic.
  3. When it’s fragrant, add in your soup base, rice cake, and scallions. Let boil for a couple of minutes.
  4. Season with soy sauce, salt, and pepper.
  5. Pour over scrambled egg in the soup to make ribbons. When cooked, place in a bowl to serve.
  6. Top with more scallions and stripped seaweed paper.
