Caroline is a soon-to-be Cal Poly graduate and the granddaughter of Ancient Peaks Co-Owner, Rob Rossi. She will be graduating this June with a degree in Hospitality from California Polytechnic State University in San Luis Obispo. You may have had the pleasure of interacting with her in the Tasting Room or during an event at Oyster Ridge Barn during her internship time here at Ancient Peaks Winery. After graduation, she will be joining us full-time as our new Brand Ambassador and is excited about this new chapter in her life! She’s celebrating with a few of her favorite wines and we wanted to share them with you!
2022 SAUVIGNON BLANC
When do you choose to drink it? “I love sipping on a glass on a warm summer evening when I’m hanging out with family or reading a book during sunset.”
What food pairing would you choose with this wine? “I would pair this with my Dad’s famous Seafood paella. The vibrance in the Sauvignon Blanc pairs perfectly with the saltiness of the seafood and saffron.”
2022 ROSÉ
When do you bring out the Rosé? “Rosé is my favorite wine to enjoy with friends and it’s always a crowd pleaser. We always love the rosé during a girl’s night and it pairs perfectly with any dish we’re cooking together.”
What food pairing would you choose with this wine? “I would pair this with my friend, Apolline’s, delicious French Quiche Lorraine. The gouda in the dish brings out the tanginess in the Rosé.”
2021 PINOT NOIR
What about Pinot? “Although I love white wines, I enjoy a nice, lighter style red and the Ancient Peaks Pinot Noir is perfect for that!”
What food pairing would you choose with this wine? “I would drink this wine with my 3-hour Spaghetti Bolognese dinner. I find the subtle flavors of cherry, plum, and rose petal brings out the tartness of the tomatoes and the sharpness in the parmesan cheese, delicious!”
