FANTASTIC FONDUE

INGREDIENTS

1 pound Gruyere cheese, grated

1/2 pound Swiss cheese, grated

1 cup Ancient Peaks Chardonnay

1 tablespoon plus 1 teaspoon cornstarch

1 tablespoon lemon juice

salt + pepper to taste

1 loaf French bread

 

INSTRUCTIONS

  1. Combine the grated cheese with wine, cornstarch, and lemon juice in the fondue pot and cook over moderate heat, stirring occasionally, until the cheese begins to melt. This should take about 5 minutes.
  2. Pour your own glass of Chardonnay!
  3. Reduce heat to low. Salt + pepper to taste and cook, stirring gently until creamy and smooth for about 3 minutes. Don’t overcook the fondue or it will get stringy!
  4. Serve with your favorite bread, strawberries, grilled sausages, cooked potatoes, and salami for an optimal pairing with Chardonnay and Merlot.
